CHONTADURO

The Chontaduro, also called Pejibaye, is the fruit of a palm tree that is native to the Pacific areas of Central and South America as well as the Amazonian region. Growing from Nicaragua to Bolivia it is a beautiful red fruit when fully ripe, and yellowish to green when unripe.  The chontaduro is delicious when cooked, with a bit of salt or honey. It is also a very nutritious fruit; almost as high in protein as an egg it also contains beta-carotene, phosphorus, Vitamin A, some B and C, calcium and iron.
